WE FOLLOW THE GALVIN BROTHERS AS THEY COUNT DOWN TO THE OPENING OF THEIR NEW CITY RESTAURANT

IN 14 days time we open Galvin La Chapelle and Galvin Cafe de Luxe. Wednesday 18 November will see the culmination of two years of planning and preparation and 25 weeks of building and design. It feels like aeons since the day when Chris, our business partner Ken and I first learned that our bid for this fantastic site had been successful. We cant wait to throw open the doors and welcome you all in.

La Chapelle, our fine dining room, will seat up to 100 people and boasts an amazing wine list, including a vertical list of Hermitage La Chapelle complemented by such dishes as salad of partridge with pomegranate and maple dressing and slow-cooked Pyrenees lamb Basquaise with herb ravioli. I will be cooking, assisted very ably by a carefully selected brigade.

Cafe de Luxe is an all-day cafe open from 8am to 10pm with seating for up to 50 people inside and 30 people outside. Head chef David Stafford, who has previously worked at River Cafe and Cafe Anglais will be at the helm cooking his wood-fired specialities alongside some of our signature bistrot dishes. Chris is itching to go on the wood-fired stove, so don’t be surprised to see him in the kitchen too.

Of course, before the hard work commences we have found the time to have a small party, which is already a sell-out, and with guests such as hotel inspector Ruth Watson giving us her blessing, what more could two boys from Essex ask for?
